They share an experience of a <a title=\"kaizen in a restaurant\" href=\"https:\/\/staging.opexlearning.com\/resources\/restaurant-kaizen\/9268\/\">Restaurant Kaizen<\/a>, or maybe a fast food chain, that applied the principles of Lean Thinking with amazing results. There are also clear applications of <a title=\"application of queueing theory in a restaurant\" href=\"https:\/\/staging.opexlearning.com\/resources\/queueing-theory-in-a-restaurant-operation\/9286\/\">queueing theory in a restaurant<\/a> that can <a title=\"simple improvements include visual management\" href=\"https:\/\/staging.opexlearning.com\/resources\/restaurant-operations-visual-management\/8030\/\">yield improvements<\/a>.<\/p>\n<p>In their words,<\/p>\n<blockquote><p>The [restaurant] mapped daily changes in demand to highlight fluctuations, introduced a self-service counter, and redesigned kitchen and food preparation procedures to standardize sandwich making and eliminate waste, which consequently fell by 40 percent.<\/p>\n<p>Meanwhile, labor costs dropped by 15 percent and service times improved by one-third.
